As the weather reports promise a drop in temperature this week, salads and Summer dishes will take a step back to allow for warming soups and stews. Pumpkins and squashes are filling shelves everywhere, so now is the time to enjoy them. Also there is nothing more reassuring than a hot bowl of soup on a crisp Autumn day.
With soups I generally make it up as I go along by chucking in vegetables, stock and herbs but today I fancied something different, especially as it was to be my first soup of the season. So the BBC Good food website came to my rescue with this delicious and super easy recipe. With very little effort this will give you a beautifully fragrant colourful lunch. Enjoy!
